Make With Me- Asian Mushroom Skewers

Asian Mushroom Skewers


Ingredients:
  • 1/2 cup bottle Thai-ginger marinade
  • 1 clove garlic, minced
  • 8 ounces fresh mushrooms, cleaned
  • 12 fresh pearl onions
  • 1/2 medium red bell pepper, cut into 8 pieces
  • 4 12 inch metal skewe
To make:
  • Blend marinade and garlic in a medium bowl
  • Add mushrooms, onions and pepper pieces
  • Seal bowl and refridgerate for 1 to 4 hours
  • Heat grill to medium
  • Place one pepper piece, 1/4 mushroom, 1/4 onion, another pepper piece on skewer
  • Repeat on the other 3 skewers
  • Place skewers on grill
  • Grill covered for 15-20 minutes or until vegetables are tender, turning occasionally
  • While grilling, you can brush the skewers with the remaining marinade if desired
  • Enjoy!

Notes:
  1. You can use frozen, partially thawed pearl onions
  2. 2 tablespoons chopped fresh cilantro and 1/4 teaspoon cayenne can also be added to the mixture
  3. Instead of a bowl, everything can be placed in a large ziplock bag
