Make With Me

Pancetta Crisps with Goat Cheese & Pear

  • 16 thin slices of pancetta
  • 16 tsp of soft goat cheese
  • 2 small very ripe pears, halved, cored & cut into 1/4 inch thick slices
  • Fresh thyme leaves

To make:
  • Preheat oven to 450
  • Place pancetta in a single layer on a large rimmed baking sheet
  • Bake about 10 minutes or until crisp
  • Using a spatula, slide pancetta crisps to platter
  • Top each with a tsp of goat cheese and 1 pear slice
  • Sprinkle with thyme
  • Enjoy!

  2. Pear can be substituted for avocado
  3. Pancetta will be VERY greasy after baking, I suggest patting the crisps with a paper towel to soak up some of the grease before adding the cheese and pears/avocado
